Instructions
- Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
- Combine flour, powdered sugar, and salt. Cut in butter until crumbly. Press into the baking dish and bake for 15 minutes.
- In a bowl, whisk eggs, sugar, lemon juice, lemon zest, and cornstarch. Pour over pre-baked crust.
- Sprinkle cranberries evenly over the lemon filling. Bake for 25-30 minutes until set and slightly golden.
- Cool completely before slicing. Garnish with extra cranberries or lemon zest if desired.
