- 3 ripe bananas, mashed
- 1 cup grated carrots
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, whisk mashed bananas, eggs, oil, sugar, and vanilla.
- In a separate bowl, combine flour, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in grated carrots and walnuts.
- Pour batter into prepared loaf pan and bake for 55-65 minutes, until a toothpick comes out clean.
- Allow to cool before slicing and serving.
Notes
- Store in an airtight container for up to 3 days.
- You can substitute walnuts with pecans or almonds.
- Adding a cream cheese glaze enhances the flavor.
