- 2 lbs boneless, skinless chicken breasts or thighs
- 1/4 cup honey
- 2 tbsp chipotle peppers in adobo sauce, minced
- 2 cups cooked white rice
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Mix honey, minced chipotle, smoked paprika, garlic powder, salt, and pepper in a bowl.
- Marinate chicken in half of the honey chipotle mixture for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken until golden and cooked through, about 6-8 minutes per side.
- While chicken cooks, prepare rice and set aside.
- Slice cooked chicken and serve over rice, drizzle with remaining honey chipotle sauce.
- Garnish with fresh cilantro and lime wedges.
Notes
- Adjust spice level by adding more or less chipotle peppers.
- For a healthier option, use chicken breast and brown rice.
