  • 2 lbs boneless, skinless chicken breasts or thighs

  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 2 cups cooked white rice
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Mix honey, minced chipotle, smoked paprika, garlic powder, salt, and pepper in a bowl.
  2. Marinate chicken in half of the honey chipotle mixture for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Cook chicken until golden and cooked through, about 6-8 minutes per side.
  5. While chicken cooks, prepare rice and set aside.
  6. Slice cooked chicken and serve over rice, drizzle with remaining honey chipotle sauce.
  7. Garnish with fresh cilantro and lime wedges.
