- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into chunks
- 1 tablespoon Cajun seasoning
- 1 small onion, diced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add seasoned chicken and cook until browned. Remove and set aside.
- In the same skillet, sauté onion, bell pepper, and garlic until soft.
- Add orzo pasta and cook for 2 minutes, stirring.
- Pour in chicken broth, add paprika, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 10 minutes until orzo is tender.
- Return chicken to skillet, stir, and cook for an additional 5 minutes.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute chicken with shrimp or andouille sausage for variety.
- Adjust spice level by adding more Cajun seasoning.
- Serve with a side salad for a complete meal.
