- 1 lb (450g) thinly sliced beef
- 1 cup shredded cheese (cheddar or provolone)
- 1 bell pepper, sliced
- 1 small onion, sliced
- 2 cups cauliflower rice
- 2 tbsp olive oil

Instructions
- Heat 1 tbsp olive oil in a skillet over medium-high heat.
- Sauté sliced beef until browned, season with salt and pepper, then remove from skillet.
- In the same skillet, add remaining oil and sauté peppers and onions until tender.
- Cook cauliflower rice until soft, season to taste.
- Assemble bowls with cauliflower rice, topped with beef, sautéed vegetables, and shredded cheese.
- Garnish with fresh herbs before serving.
