- 1 cup cherry tomatoes
- 1 green bell pepper, sliced
- 1 red onion, sliced
- Lemon wedges for serving

Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil, oregano, garlic powder, paprika, salt, and pepper.
- Rub the spice mixture over both sides of the chicken breasts.
- Place chicken and vegetables on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes or until chicken reaches an internal temperature of 165°F.
- Garnish with fresh parsley and lemon wedges before serving.

- You can substitute chicken thighs for breasts.
- Add kalamata olives or feta cheese for extra flavor.
