Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and cook until fragrant, about 1 minute.
- Stir in orzo and cook, stirring frequently, until lightly toasted.
- Pour in vegetable broth, bring to a boil, then reduce heat to low and cover.
- Simmer until orzo is tender and liquid is absorbed, about 10 minutes.
- Stir in cherry tomatoes, cheese, salt, and pepper.
- Garnish with fresh herbs and serve hot.
