Ingredients

  • 8 oz (225 g) rotini pasta
  • 2 cups fresh yellow corn kernels
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, paprika, salt, and pepper to create the dressing.
  3. Add the cooked pasta, corn kernels, and chopped cilantro to the dressing. Toss until well coated.
  4. Sprinkle with crumbled cotija cheese just before serving. Garnish with additional cilantro if desired.
