- 8 oz (225 g) rotini pasta
- 2 cups fresh yellow corn kernels
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
- In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, paprika, salt, and pepper to create the dressing.
- Add the cooked pasta, corn kernels, and chopped cilantro to the dressing. Toss until well coated.
- Sprinkle with crumbled cotija cheese just before serving. Garnish with additional cilantro if desired.
Notes
- You can substitute the cotija cheese with feta or queso fresco.
- For extra spice, add chopped jalapeños or hot sauce.
