- 2 large sweet potatoes, peeled and cubed
- 2 chicken breasts, sliced
- 1 avocado, sliced
- 1 cup mixed greens
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- Sesame seeds and chopped herbs for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes until tender and crispy.
- While roasting, heat 1 tbsp olive oil in a skillet over medium heat. Cook chicken slices until golden and cooked through, about 6-8 minutes.
- Arrange cooked sweet potatoes, chicken, avocado slices, and greens in serving bowls.
- Garnish with sesame seeds and herbs. Serve immediately.
