- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef
- 1 cup cooked rice
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off bell peppers and remove seeds and membranes.
- Heat olive oil in a skillet over medium heat. Add onion and garlic; cook until translucent.
- Add ground beef, season with salt, pepper, and paprika; cook until browned.
- Stir in cooked rice and mix well.
- Stuff each pepper with the beef and rice mixture. Place in a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
Notes
- You can substitute ground turkey or chicken for beef.
- Adjust seasoning as needed. Serve hot with a side salad or crusty bread.
