- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn kernels
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- Fresh cilantro and lime for garnish
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the diced onion and garlic, cooking until translucent.
- Stir in the black beans, corn, diced tomatoes, beef broth, and taco seasoning.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, topped with shredded cheese, cilantro, and lime wedges.

- Feel free to add chopped jalapenos for extra spice.
