Ingredients

  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1/4 cup all-purpose flour
  • 4 large potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C). In a mixing bowl, combine ground beef, bread crumbs, Parmesan, egg, garlic, thyme, salt, and pepper. Form into 12 meatballs.
  2. In a large skillet, heat olive oil over medium heat. Brown meatballs on all sides, then transfer to an oven-safe dish and bake for 20 minutes.
  3. In the same skillet, whisk flour into beef broth to create gravy. Simmer until thickened. Add meatballs back to the skillet to coat with gravy.
  4. Meanwhile, cook potatoes in boiling salted water until tender, about 15 minutes. Drain and mash with butter, cream, garlic, salt, and pepper.
  5. Serve meatballs with gravy over creamy mashed potatoes, garnished with parsley.
