Ingredients

  • 1 pound (450g) ground beef or turkey
  • 1 package (9 oz) cheese tortellini
  • 4 cups (960ml) chicken broth
  • 1 cup (150g) finely chopped onion
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat a large pot over medium heat. Combine ground meat with salt, pepper, and Italian seasoning. Form into small meatballs and cook until browned. Remove and set aside.
  2. In the same pot, sauté chopped onions and garlic until fragrant. Add diced tomatoes and chicken broth. Bring to a boil.
  3. Add meatballs back into the broth. Reduce heat, simmer for 10 minutes.
  4. Stir in tortellini and cook for another 5 minutes until tender.
  5. Garnish with chopped parsley before serving.
