- 1 pound (450g) ground beef or turkey
- 1 package (9 oz) cheese tortellini
- 4 cups (960ml) chicken broth
- 1 cup (150g) finely chopped onion
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat a large pot over medium heat. Combine ground meat with salt, pepper, and Italian seasoning. Form into small meatballs and cook until browned. Remove and set aside.
- In the same pot, sauté chopped onions and garlic until fragrant. Add diced tomatoes and chicken broth. Bring to a boil.
- Add meatballs back into the broth. Reduce heat, simmer for 10 minutes.
- Stir in tortellini and cook for another 5 minutes until tender.
- Garnish with chopped parsley before serving.
