- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 2 lemons, zested and juiced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken breasts in the slow cooker and season with salt, pepper, thyme, and rosemary.
- In a bowl, combine lemon juice, zest, garlic, olive oil, and chicken broth. <li id="instruction-step-3" pour the mixture over the chicken.
- Cover and cook on low for 6 hours.
- Meanwhile, rinse rice and cook separately if desired, or add directly to slow cooker in the last hour.
- Serve chicken over rice, garnished with fresh parsley and lemon slices.
Notes
- You can add vegetables like spinach or peas during the last 30 minutes of cooking for added nutrition.
