- 1 pound Italian sausage, sliced
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (9-ounce) package refrigerated tortellini
- 1 cup chopped spinach

Instructions
- In a large pot, cook Italian sausage slices until browned. Remove and set aside.
- Sauté chopped onion and garlic in the same pot until fragrant and translucent.
- Pour in chicken broth, add Italian herbs, salt, and pepper. Bring to a boil.
- Add tortellini and cook according to package instructions.
- Stir in cooked sausage and chopped spinach. Simmer until spinach wilts and flavors meld.
- Serve hot topped with grated Parmesan cheese and fresh herbs.
