- 2 cups cooked shredded chicken
- 1/2 cup BBQ sauce
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/4 cup chopped green onions
- Optional: sour cream and salsa for serving
Instructions
- In a bowl, mix shredded chicken with BBQ sauce until coated.
- Heat a skillet over medium heat.
- Place one tortilla in the skillet, sprinkle with shredded cheese, add BBQ chicken mixture, then more cheese and top with another tortilla.
- Cook until golden brown and cheese is melted, about 3-4 minutes per side.
- Remove from skillet, cut into wedges, and garnish with green onions. Serve with sour cream and salsa.
Notes
- For extra flavor, add sliced jalapenos or diced bell peppers inside the quesadilla.
- Use a non-stick skillet for crispy results.
