Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix flour, sugar, baking powder, and salt in a bowl. Cut in cold butter until crumbly.
- Add coffee and vanilla, mix until a soft dough forms.
- In a small bowl, combine brown sugar and oats for the topping.
- Drop spoonfuls of dough onto the prepared baking sheet. Sprinkle crumble topping evenly over each cookie.
- Bake for 12-15 minutes until golden brown. Allow cooling before serving.
