- 1 pound sausage, sliced
- 1 package tortellini
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat, cook sausage until browned, then remove and set aside.
- Sauté onion and garlic until fragrant and translucent.
- Add chicken broth, bring to a boil.
- Stir in tortellini, cook until al dente according to package instructions.
- Reduce heat, add cooked sausage, heavy cream, and spinach, simmer until heated through.
- Season with salt and pepper, serve hot.
Notes
- You can substitute spinach with kale or other greens.
- Add red pepper flakes for a spicy kick.
