A rich and creamy potato soup made with tender potatoes, onion, garlic, and a blend of herbs, finished with cream for a silky texture.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

  • Sour cream for topping

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add diced potatoes and cook for 5 minutes, stirring occasionally.
  3. Pour in broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  5. Stir in heavy cream, season with salt and pepper, and heat through.
  6. Serve hot, garnished with chives and a dollop of sour cream.

Notes

  • You can substitute half-and-half for heavy cream for a lighter version.
  • For extra flavor, add cooked bacon bits or shredded cheddar cheese.
