  • 1 lb beef stew meat, cubed
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 celery stalks, chopped
  • 1 cup green beans, cut
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant. Add carrots, potatoes, and celery; cook for 5 minutes.
  3. Return beef to the pot, pour in beef broth, and bring to a boil. Reduce heat, cover, and simmer for 1 hour until beef is tender.
  4. Add green beans, simmer for another 10 minutes. Season with salt and pepper.
  5. Garnish with chopped parsley before serving.

  • You can use leftover cooked beef for quicker preparation.
