- 1 lb beef stew meat, cubed
- 2 carrots, sliced
- 2 potatoes, diced
- 2 celery stalks, chopped
- 1 cup green beans, cut
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant. Add carrots, potatoes, and celery; cook for 5 minutes.
- Return beef to the pot, pour in beef broth, and bring to a boil. Reduce heat, cover, and simmer for 1 hour until beef is tender.
- Add green beans, simmer for another 10 minutes. Season with salt and pepper.
- Garnish with chopped parsley before serving.
Notes
- You can use leftover cooked beef for quicker preparation.
- For thickened soup, mash a few potatoes and stir back into the pot.
