- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1 cup chocolate chunks or chips
- 1/2 cup graham cracker crumbs
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and graham cracker crumbs.
- In a separate large bowl, beat softened butter, brown sugar, and granulated sugar until creamy.
- Add egg and vanilla, and beat until combined.
- Gradually mix in flour mixture until just combined.
- Fold in mini marshmallows and chocolate chunks.
- Scoop dough onto prepared baking sheets, about 2 tablespoons per cookie.
- Bake for 10-12 minutes until edges are golden and marshmallows are melted.
- Allow to cool slightly before transferring to a wire rack to cool completely.
Notes
- For extra gooey centers, press a few marshmallows into the dough before baking.
- You can use big marshmallows sliced in halves for a more authentic s’mores look.
