Chewy s’mores cookies made with graham cracker crumbs, chocolate chunks, and gooey marshmallows, baked to perfection for a delightful treat.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup chocolate chunks or chips
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and graham cracker crumbs.
  3. In a separate large bowl, beat softened butter, brown sugar, and granulated sugar until creamy.
  4. Add egg and vanilla, and beat until combined.
  5. Gradually mix in flour mixture until just combined.
  6. Fold in mini marshmallows and chocolate chunks.
  7. Scoop dough onto prepared baking sheets, about 2 tablespoons per cookie.
  8. Bake for 10-12 minutes until edges are golden and marshmallows are melted.
  9. Allow to cool slightly before transferring to a wire rack to cool completely.

Notes

  • For extra gooey centers, press a few marshmallows into the dough before baking.
  • You can use big marshmallows sliced in halves for a more authentic s’mores look.
